A Beginning

As I write this post, it is the middle of January with the holidays behind. While on vacation, I was reflecting on the past year and thinking about what I’d like for 2023 to hold.

It was 2019 when we began our plant-based journey ever so slowly. We are active people, and it was important to consume a well-rounded diet that fit into our busy lifestyle. Equally important, to me was reducing my risk of disease as I aged, since cancer is prevalent in my family.

The summer of 2020, our garden was abundant, especially the kale! I made kale Caesar salad, added kale to stir fry’s, smoothies, made kale chips and the list goes on. In my mind, our plant-based journey was going strong, we were consuming our nutrient dense leafy greens.  We were eating SO much kale that my husband began to offer it to anyone who was walking by. I took the hint…..in order to succeed, we needed a different approach.

So began the process of experimenting with plant-based recipes, learning how to eat a well-rounded diet, how to add flavor and taking it slow. We were in transition mode, eating eggs, cheese, some meat and learning how to incorporate tofu and tempeh into our meals. Flexibility is the key for success in our household and even now, four years later, it is the key to our success.

Change takes time!
