Brussels & Greens Salad

We created this salad when looking through our refrigerator deciding what was for lunch. Topped with our simple oil free balsamic dressing, it was perfect to pair with a hearty soup.

Take your salad to the next level and add your favorite bean and grain to the top of this salad.

Green Envy Salad Ingredients:

  • Spinach

  • Romaine Lettuce

  • Celery

  • Brussel sprouts

  • Toasted walnuts

When creating this salad, the ratios of spinach to lettuce was equal (roughly 3 cups each), 3 celery stalk sliced thin, Brussel Sprouts that had been put through the food processor with the slicing blade and topped with maple walnuts.

Maple Walnuts: Place chopped walnuts into a fry pan and toast until golden or you begin to smell the aroma of roasted nuts. Drizzle over the nuts maple syrup and a sprinkle each of salt and pepper. Stir or toss in the pan to cover all of them. Cool before placing on top of salad.

Balsamic Dressing:

In a bowl place:

  • 3 tablespoons plain hummus (we used Roots & Roses plain hummus)

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon maple syrup

  • 1-2 tablespoons water for thinning ~ begin with 1 tablespoon

    Stir to blend ingredients.
