Creamy Red Pepper and Cauliflower Sauce

Rich, creamy, and packed with flavor—this sauce is a nutritional powerhouse! It’s loaded with all three macronutrients and… drumroll, please… five hidden veggies!

The best part? It’s a pantry-friendly recipe that’s quick and hassle-free. With rough-cut veggies and just 7 minutes of hands-on time, you’ll have a delicious, wholesome meal in no time!

Recipe:

  • 1/2 cup sweet onions (you can use fresh and roughly chop them or find them in the frozen section of your grocery store)

  • 2 cloves or 2 tsp chopped garlic

  • 3 Red Bell Peppers (or 1-16oz jar roasted red peppers in water)

  • 1 can cannellini beans

  • 1 16oz bag frozen cauliflower

  • A pinch of salt and pepper ~ about 1/2 teaspoon each

  • 2 tablespoons lemon juice

Place pan on stovetop on medium heat, add onion, garlic, red peppers and sauce until halfway cooked through. Add beans, cauliflower, salt and pepper. Cook for 10 minutes.

Once all veggies are soft, place mixture into a high speed blender (we used Vitamix) with 1/2 cup water and lemon juice. Begin processing on low, slowly increasing the speed until mixture is smooth. Taste and add more salt, pepper or lemon juice.

Enjoy over pasta, gnocchi, roasted veggies or a dipping sauce for a sandwich.
